Ingredients

  • 1 tablespoon ghee
  • 2 eggs (substitute duck eggs)
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • ¼-1/2 tsp hot sauce, depending on desired spiciness
  • ½ avocado
  • 2 tablespoons walnuts
  • Spinkle of salt and pepper

Instructions

  1. Place a frying pan on medium-high heat and melt your ghee.
  2. Crack in your eggs, being careful not to break the yolks. Sprinkle over some salt and pepper, and place a lid or plate over the pan and reduce the heat to medium.
  3. Cook for about 2 minutes, until the whites are set but the yolks are still runny.
  4. Plate up with avocado and sprinkle over walnut clusters.
  5. Mix together the olive oil, garlic, and hot sauce and drizzle over.
