“Everyone loves mashed potatoes! Especially if you are from the Midwest. Eliminating sugar from your diet can include eliminating potatoes because of the starches that quickly turn to sugar in your body. You will be surprised how flavorful this tastes! This is one of my husband’s favorites!”

INGREDIENTS

  • 1-2 heads of cauliflower, cut into florets (see notes)
  • 1 Tbsp (or more) avocado oil
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1-2 Tbsp fresh herbs like chives, rosemary, oregano, or thyme
  • sea salt and black pepper to taste
  • 2 Tbsp ghee or butter alternative

DIRECTIONS

  1. Steam or boil cauliflower for 8-10 minutes. While cauliflower is cooking, add oil to another pan and sauté onion and garlic until soft. If you spray the pan with an herb-infused avocado oil, there will be even more flavor.
  2. Place the cauliflower, sautéed onion and garlic, and fresh herbs and seasonings into a high-speed blender. Make sure not to pour in any residual water/oil from cooking when placing cauliflower and sautéed onion and garlic in the blender, or it will be soupy.
  3. Add the ghee or butter alternative and blend until smooth.
  4. Taste and add sea salt and pepper if needed.
  5. Enjoy!

NOTES

Use 2 heads of cauliflower if they are small.
