Gluten-Free Pumpkin Pie Recipe
Ingredients:
Crust:
- 1 ½ cups almond flour
- ¼ cup coconut flour
- ¼ cup coconut oil (melted) or grass-fed butter
- 1 tbsp honey or maple syrup
- 1 egg
- ½ tsp sea salt
Filling:
- 1 can (15 oz) organic pumpkin puree
- 3 large eggs
- ½ cup full-fat coconut milk
- ½ cup pure maple syrup
- 1 tsp vanilla extract
- 1 ½ tsp cinnamon
- ½ tsp ground ginger
- ¼ tsp nutmeg
- ¼ tsp cloves
- Pinch of sea salt
Instructions:
- Preheat your oven to 350°F (175°C).
- Prepare the crust: In a bowl, mix almond flour, coconut flour, salt, melted coconut oil (or butter), honey/maple syrup, and egg until combined. Press evenly into a 9-inch pie pan.
- Parbake the crust for 10 minutes, then set aside to cool slightly.
- Make the filling: In a large bowl, whisk together pumpkin puree, eggs, coconut milk, maple syrup, vanilla, and spices until smooth.
- Pour the filling into the pre-baked crust.
- Bake for 45–55 minutes, or until the center is just set and slightly jiggles.
- Cool completely before serving — ideally refrigerate for a few hours for the perfect slice.
